Angel Hair Pasta
Ingredients:
Angel hair—10 oz.
Red and yellow cherry tomatoes—2 cups
Broccoli florets—2 cups
Baby bella mushrooms—8 oz.
Artichoke hearts—1 can
Garlic powder—3 teaspoons
Olive oil—2 teaspoons
Kosher salt—to taste
Freshly ground black pepper—to taste
Grated parmesan—1 cup
Sliced fresh basil—for garnishing
Instructions:
1. Drain the artichoke hearts and chop them roughly.
2. Place a large pot with water on the stove and add a teaspoon of salt to
the water. Add the pasta when the water is boiling (on medium heat).
When the pasta is cooked, save a cup of water and drain the
remaining water.
3. Preheat the oven to 400 degree F. Take a large baking sheet and place
the cherry tomatoes, broccoli florets, mushrooms, and artichoke
hearts. Dribble the olive oil over them and season with the garlic
powder and desired amount of salt and pepper. Toss so everything is
well combined.
4. Shift them to the oven and roast for 15 minutes.
5. After the vegetables are tender and caramelized, remove them from
the oven and add to the pot with angel hair. Add in the parmesan as
well. On low heat, add ½ cup of the saved pasta water and keep
stirring until you get a nice sauce. Add more water if required.
6. Garnish with more pasta and basil and serve with the chicken stew.
