Creamed Spinach
Ingredients:
Fresh and large spinach bunches—3
Minced garlic—2 teaspoons
Olive oil—1 ½ tablespoons
Unsalted butter—1 ½ tablespoons
Red pepper flakes—1 teaspoon
Nutmeg powder—1 large pinch
Milk—¾ cup
Heavy cream—½ cup
Kosher Salt—to taste
Freshly ground black pepper—to taste
Fried Eggs—2–4 (sunny-side up or in a way you like)
Crusty bread
Instructions:
1. Wash the spinach stems thoroughly and cut off the stems. Chop them
well and put them in a colander in order to drain any excess water.
2. Place a large skillet on the stove on medium heat. When the skillet is
hot, add the butter and oil. After the butter melts, add in the garlic and
keep stirring it until it is fragrant.
3. Now add in the chopped spinach and give it a good stir and combine
it well with the oils. Cover it and allow it to cook on the steam till the
leaves are well wilted.
4. Remove the lid after about 5 minutes and drop in the red pepper
flakes, nutmeg, salt, and pepper. Keep stirring until the water
evaporates completely and the oil oozes from the sides.
5. Reduce the heat to low and add in the milk and cream while stirring
continuously. Cook for about 5 minutes. Do not let the liquid
evaporate more.
6. As it is cooking, fry the eggs and toast the bread.
7. Transfer the spinach mix into a bowl and top it with the eggs and
bread.
